Simple Weekly Meal Plan (Aldi Grocery List Included)

Here’s a simple, budget-friendly weekly plan—Aldi-style! We’ve increased our grocery budget a bit (from $70 to ~$100), to improve our nutrient intake and focus more on whole foods. This isn’t a perfectly healthy meal plan by any means - I still opted for canned chicken and store-bought tortillas. BUT I’m hoping to keeping making small healthier choices, one week at a time!

Weekly Meal Plan

Here’s what we’re eating this week!

Sunday - Crockpot chicken fajitas, homemade pico de gallo, chips & queso
I grabbed canned chicken breast, bell peppers, red onion, taco seasoning, flour tortillas, limes, tomatoes, and chips from Aldi. Then we splurged to get some fancy queso from Publix. I have some leftover fresh cilantro from last week’s meal plan, so I’m excited to use that up for some homemade pico de gallo!

Monday - Burgers, oven fries, salad mix
Aldi sells $6 organic ground beef, which I can’t pass up. I grabbed some cheap white flour buns, pepper jack cheese slices, lettuce, and tomatoes. Then I added frozen fries and an Aldi salad kit for some easy sides.

Tuesday - Shakshuka, garlic bread, roasted brussels sprouts
This one was a request from my husband, though we both agreed it’s better when you’ve grown your own tomatoes! Our tomatoes are still growing, so we opted for Aldi’s beefsteak tomatoes this time. Add some farm fresh eggs, garlic, onion, spices (paprika, cumin, etc.), and you’ve got a delicious one pan meal for your family. I serve with crusty bread (an Aldi baguette!) with butter and garlic, and fresh brussels tossed in olive oil and salt.

Wednesday - Dinner Out
We’ll either have dinner with friends on Wednesday, or head to our church for Wednesday night fellowship dinner. The goal is to stay around $20 for all of us - we’ll see what we can do!

Thursday - Salmon bowls with coconut rice
I’m trying to introduce more salmon into our diet! I grabbed frozen salmon fillets, edamame, cucumber, avocado, and siracha garlic aioli from Aldi. I already have rice and canned coconut milk at home, I’m excited to pull this all together!

Friday - Chick-fil-A and leftovers
I still get Chick-fil-A for my husband on Fridays, but my toddler and I will use this night to finish any extra fajitas, salmon, or veggies from earlier in the week. I’m trying to chill

Saturday - Pizza night and leftovers
I always get a 4.99 pizza from Aldi for my husband, he loves them! But for my toddler and I, we’ll raid the pantry and fridge for any leftovers - we might even make a pizza out of them!

General Grocery List
Aldi staples: chicken breast (canned is cheapest!), ground beef, frozen salmon, salad kits, buns, cheese, frozen fries, chips, tortillas
Pantry pulls: spices, olive oil, garlic, rice, coconut milk,
Fresh add-ons: cilantro, lime, tomatoes, onion, cucumber, brussel sprouts, avocado

We’re keeping it simple, stretching what we have, and making space for rest and fellowship midweek. I’ll be back with a more detailed meal plan next week, complete with an Aldi grocery list and some meal breakdowns.
