Ingredients for Freezer-Friendly Breakfast Sandwiches:

Here’s what you’ll need:

  • English MuffinsSoft, hearty, and perfectly sized for sandwiches. I shop almost exclusively at Aldi, so I buy the “L’oven Fresh” brand. Each package contains 6 English muffins, for less than $1.50!

  • Pepper Jack Cheese SlicesThe creamy, spicy flavor of pepper jack cheese adds a little kick to your sandwich, and it happens to be my husband’s preferred cheese. Feel free to use slices of whatever cheese you prefer! We buy the “Happy Farms by Aldi” Pepper Jack Cheese; there are ten slices in a package, so you’ll have a few slices leftover! At my Aldi, a package is about $2.50.

  • EggsA classic breakfast essential, eggs provide protein and make the sandwich filling and satisfying. We have an “egg dealer” from a local farm, so we pay$10 per 30 eggs.

  • Sausage PattiesPre-cooked sausage patties are a quick and flavorful protein option. You can also swap these out for bacon or turkey sausage based on your preferences. We purchased a 24-pack of Swaggerty’s Farm Premium Sausage for this recipe, which run for about $9.00 at Aldi.


Step-by-Step Guide: How to Make Freezer-Friendly Breakfast Sandwiches

  1. Prepare the Sausage Patties:

Start by cooking your sausage patties.

If you’re using pre-cooked sausage patties, simply heat them in a pan or microwave until hot (it’s best to cook before freezing again, to get rid of some of the moisture). 

If you're starting from raw sausage, fry them in a skillet until golden brown and cooked through, about 5-7 minutes per side.

*Pro Tip: I use a nifty appliance called the “Cuisinart” Waffle & Pancake Maker - it was a wedding gift! It heats up like a griddle, and you’re able to swap the pancake griddle for waffle irons as well. I use the pancake griddle for both the sausage patties and the eggs!

Set the cooked patties aside to cool slightly.

*Pro Tip: Place your cooked sausage patties on some paper towels, or lightly pat them dry, to remove excess grease. This prevents the English Muffin from getting soggy when it’s time to reheat and eat!

2. Cook the Eggs:

In a large skillet or griddle, cook the eggs to your preference. For breakfast sandwiches, scrambled eggs work wonderfully, but you can also cook them as fried eggs if you prefer.

*Pro Tip: If you’re preparing multiple sandwiches, like I do to store in the freezer, consider scrambling a few eggs at once and dividing them evenly for each sandwich. 

Again, I like to use our Cuisinart appliance, cooking the eggs in the grease leftover from the sausage patties for extra flavor! The griddle iron has inset circles, which cooks the eggs into perfectly sized circles for the English Muffin.

I also like to undercook the eggs a bit. Making over easy eggs for this recipe gives you perfectly runny yolks when you reheat the sandwiches later on!

3. Toast the English Muffins (Optional):

Optional: While the sausage and eggs are cooking, slice your English muffins in half and toast them lightly. You can toast them in a toaster or on a skillet until they’re golden and slightly crispy.

If you choose to do this step, it will help prevent the muffins from becoming soggy when they’re reheated after freezing.

4. Assemble the Sandwiches:

Once the sausage patties, eggs, and English muffins are ready, it’s time to assemble the sandwiches.

Add a sausage patty, followed by a scoop of scrambled eggs or a single over-easy egg. Top the eggs with slices of pepper jack cheese (or your cheese of choice), and then finish with the other half of the English muffin to complete your sandwich.

To ensure the sandwiches freeze properly, wrap each sandwich tightly in plastic wrap or aluminum foil. If you only use plastic wrap, be sure to place the wrapped sandwiches in a large resealable freezer bag or an airtight container. I use aluminum foil, and just toss them in the freezer as is. 

*Pro tip: If you’re stocking your freezer with these sandwiches for more than a few weeks, be sure to label with the date so you can easily keep track of how long they’ve been in the freezer. These sandwiches can be stored for up to 2-3 months. (Though in our house, they don’t last more than a week!)

6. Reheating Your Freezer-Friendly Breakfast Sandwiches:

When you’re ready to enjoy your breakfast sandwich, simply remove it from the freezer and unwrap it. You can reheat it in the microwave for about 1-2 minutes or in the oven at 350°F for 10-12 minutes. Make sure the sandwich is heated through before serving.

*Pro tip: If you’re in a time crunch but still need to reheat in the oven, take the top half off of the English muffin and cook both sides up for faster reheating!

  • Vegetarian Options: Though I’ve not tried these myself, I bet swapping out the sausage for a veggie patty, or adding sautéed vegetables like spinach, mushrooms, or bell peppers would make for a great vegetarian-friendly option.

  • Different Cheeses: If you’re not a fan of pepper jack cheese, you can easily swap it for cheddar, Swiss, or mozzarella.

  • Additional Toppings: Add condiments like ketchup, salsa, or avocado for extra flavor. You can even add a slice of tomato or fresh greens like spinach or arugula for a burst of freshness. If you’re freezing your sandwiches, be sure to add these items after reheating, to avoid a mushy mess in the microwave or oven!
